When we talk about Korean cuisine, one of the most popular foods that comes to mind is kimchi. This delicious and flavourful dish is prepared by fermenting vegetables. Thus, it is often prepared in advance and stored for extended periods of time. Recently, an Instagram reel showing a Korean family making large batches of vegan Kimchi has gone viral. People online have been fascinated by the process as well as the tremendous effort that goes into it. In the video shared by @3genfam, we see a group of women seated on the floor of a room. In front of them, some of the ingredients used for making kimchi are spread across containers and on old newspapers.

The first step is to cut the base of cabbages and then split each one into halves. Next, they are submerged in salt water bath. Once soaked well, the cabbages are removed and salt is sprinkled in netween the leaves. After this, the cabbages are stacked on top of each other in large, transparent plastic bags. Salt water and extra salt is added to them. The same process is replicated fo ponytail radishes.

The video also shows how kimchi paste is prepared from scratch. Rice flour and veggie broth are combined along with chilli powder. Next, chopped pears, ginger, garlic, onions and red chillies are blended to form a paste. This paste is added to the mixture prepared earlier. Palm sugar, stevia and sesame seeds are also added to it. All the ingredients are thoroughly combined with each other in a large vessel. A special ingredient known as sea staghorn is also prepped as part of the process.

Next, the cabbages are washed and placed in a strainer, so that excess water will get drained out. The sliced cabbages, carrots, sea staghorn, mustard greens, green onions and jjokpa (another types of green onion) are then added the vessel with kimchi paste. The veggies are mixed well with the paste, by hand. The kimchi paste is then spread on the leaves of the pther cabbages and the bottom leaf is wrapped around each. The paste is also spread over ponytail radishes, chopped radishes and mustard greens. Finally, the kimchi is packed inside containers. It can be left to ferment for some time, or be enjoyed fresh. The women also prepare Pa-kimchi with the green onions.

In the end, the video shows the family relishing the fresh kimchi with sweet potatoes. Watch the complete reel below:
