What Is The Michelin Key?

The MICHELIN Key is the hotel equivalent of the famous Michelin Stars, intended to elevate hotels that exemplify extraordinary standards of hospitality. In 2025, hotels across the world will be awarded at one of three levels (One, Two, or Three Keys) based on rigorous inspection and consistent excellence. The accolades will be formally unveiled on October 8, 2025, at a ceremony in Paris. That same day, Michelin will also present four new hotel awards, each spotlighting an aspect of exceptional hospitality. One of them is the "Opening of the Year" Award. The five hotels featured below are the nominees in this category. Each of them has been open less than twelve months and has already been judged by Michelin Inspectors to be among the best new launches. (Note that the numbers in the list below do not reflect ranks).

The Five Best New Hotels Of 2025, As Per The Michelin Guide
1. Aman Nai Lert in Bangkok, Thailand

Aman Nai Lert in Bangkok, Thailand
Aman Nai Lert brings the revered Aman ethos to the heart of Thailand's capital. This hotel opening marks its first return to the country since 1988. Nestled within the verdant Nai Lert Park estate, the hotel occupies a rare green enclave amid the city's bustle. It comprises just 52 suites, many with floor-to-ceiling windows or private terraces. The dining portfolio includes omakase and teppanyaki, a cigar bar and Aman Lounge. Wellness amenities span two floors and include a detox program developed in collaboration with tennis star Novak Djokovic. The design echoes the adjacent Heritage Home and honours the legacy of the Nai Lert family, who were closely involved in development. Guests are also offered curated tours of the estate, nearby museums and Bangkok's cultural sites.
2. Collegio alla Querce, Auberge Resorts Collection, in Florence, Italy

Collegio alla Querce, Auberge Resorts Collection, in Florence, Italy
Set among Tuscany's hills just outside Florence, Collegio alla Querce reimagines a former boarding school into a romantic countryside refuge. The origins of the space go back to a 16th-century palazzo. Frescoes, coffered ceilings, stone walls, even a chapel and theatre with original balcony seating have been preserved and integrated into the hotel's public realm. Among its signature accommodations is the Residenza la Quercia, a multi-floor suite with dual living rooms, a private terrace and panoramic views toward Florence's cathedral. Guests can customise their stay via immersive experiences: private walking tours, artisan cooking classes, vineyard visits, and wine tastings throughout Tuscany. The hotel also houses the Aelia Spa and an upscale cocktail lounge that used to be the former headmaster's room.
3. The Burman Hotel in Tallinn, Estonia

The Burman Hotel in Tallinn, Estonia
Perched in Tallinn's UNESCO-listed Old Town, The Burman Hotel operates on an intimately luxurious scale (just 17 rooms). The reimagination draws on 150 years of lore while updating the space for contemporary travellers: handcrafted mattresses, advanced room controls for lighting, blinds and temperature, and lavish bathroom amenities by Amouage. Guests also benefit from a full-service spa featuring Japanese baths, a jacuzzi and a range of bespoke treatments. Dining is a focal point: two MICHELIN-selected restaurants (Koyo and Shang Shi) plus a bakery and pastry arm, Maison Francois, operate daily on site. The hotel also hosts the Bombay Club: not your average casino, but a high-end social space woven into the hotel's fabric. Its location gives guests direct access to Tallinn's Old Town charm.
4. Le Mouflon D'Or in Corsica, France

Le Mouflon D'Or in Corsica, France
Originally built in 1926 and steeped in local memory, Le Mouflon D'Or reopened in May 2025 after an ambitious restoration. Set in a highland enclave surrounded by cedars and chestnuts, it feels like a secluded refuge rather than a large resort. The owners, a married couple, have personally infused the project with regional authenticity. They have preserved original architectural elements, furnishing the space with antiques and found objects, and retaining a soulful, home-grown character. The main building offers 20 rooms along with two stone cottages. For dining, guests can visit the hotel's glass-roofed restaurant overlooking the treetops, which is especially enchanting at sunset. Additional amenities include a lounge with a fireplace, a pool bar, and a forthcoming spa. Guests are also offered exclusive access to a private beach.
5. Cheval Blanc Seychelles in Takamaka, Seychelles

Cheval Blanc Seychelles in Takamaka, Seychelles
On Mahe Island's wild, unspoiled Anse Intendance beach sits a bold new resort opening: Cheval Blanc Seychelles. It comprises 52 villas, each with a private pool, designed to blur the boundary between interior and exterior. Six restaurants spanning Japanese, Mediterranean, Creole and Italian cuisines (including the flagship Le 1974) offer a global experience that celebrates local ingredients and creative expression. The Cheval Blanc Spa presents bespoke treatments, ritual spaces, sauna, hammam and deeply restorative programming. A kids' club (Le Carrousel) with dual pools and a hidden-treasure motif ensures that family travellers also find magical moments.
As the broader MICHELIN Key awards list is unveiled in October, we'll soon come to know which hotel is chosen as the global champion.
