Chicken Korma is a classic dinner party favourite. Tender chicken cooked in creamy curd, fried onions, and a blend of warming spices. This easy recipe will help you whip up restaurant-style chicken korma right in your own kitchen.

1 Kg Chicken
500 gram Curd
5-6 Onions
5 Green Chillies
3 tbsp Ginger-Garlic Paste
1/2 cup Foxnuts (Roasted)
2 tbsp Cashew Nuts
2 tbsp Desi Ghee
1 cup Oil

2 Bay Leaves
2 Black Cardamoms
3 Green Cardamoms
1 stick Cinnamon
7-8 Black Peppercorns
1 Star Anise
3-4 Cloves

1/2 tsp Turmeric
Salt to taste
3 tsp Coriander Powder
1/2 tsp Black Pepper Powder
1/2 tsp Kewra
1 tsp Garam Masala

Start by heating oil in a pan. Fry the sliced onions until they turn golden and crisp. Once done, take them out and keep aside for later.

Heat a spoonful of ghee in a separate pan. Add the foxnuts (makhana) and fry until lightly crisp. Remove and set aside. In the same pan, lightly roast the cashew nuts until golden.

Place a handi on medium heat. Add oil, then chicken pieces. Fry for a few sec until they begin to colour. Add all the whole spices along with ginger-garlic paste & c ook until the raw smell disappears.

In a bowl, take some curd and mix in red chilli powder, black pepper, turmeric, and salt. Stir well to combine all the flavours.

Add both the plain curd and the spiced curd mixture to the chicken. Fry everything together gently. Pour in the desi ghee — this is the secret that boosts the richness and flavour of the chicken korma.

In a blender, combine the roasted cashew nuts, coconut powder, fried foxnuts, and some of the fried onions. Add a little water and grind it into a smooth paste. Add this creamy paste to the chicken.

Mash the leftover onions and stir them into the korma. Mix everything thoroughly so all the flavours come together.

Finish by sprinkling kewra water and garam masala over the korma. Cover with a lid and cook on a low flame for some time, allowing the flavours to blend perfectly.
