Often listed as vegetarian, nargisi kofta is a Mughlai dish of boiled eggs wrapped in spiced meat. Named after the nargis flower, the sliced kofta resembles a narcissus with a golden yolk centre. Historians link nargisi kofta to Mughal kitchens and suggest it may have inspired the Scotch egg.
